I had a package of silken tofu in my refrigerator for weeks before I finally decided to try baking it. We were pleasantly surprised by how moist and good this cake tasted because it contains no dairy or egg products. This is a vegan recipe. Also, rather than use a lime glaze (as suggested in the original recipe), I decided to melt chocolate over it – Yum!
Tofu Pound Cake
5 oz. silken tofu, drained
2/3 cup sugar
1/4 cup canola oil
1/4 cup vanilla soymilk
2 tsp. vanilla extract
1 1/2 cups cake flour
1 1/2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
Preheat oven to 350F. Coat 9×5-inch loaf pan with cooking spray.
October is National Breast Cancer Awareness Month, and today is the Susan G. Komen Houston Race for the Cure. Other ways that you can help raise awareness among your friends, family, or co-workers, is through volunteerism or fundraising with the National Breast Cancer Foundation or other organizations. For Mother’s Day, my parents surprised me with a KitchenAid Artisan 5-Quart Stand Mixer in Yellow Pepper. What a lucky girl I am! I have wanted one of these for several years but never got around to buying one. Now that Carina is a little more independent and we are more settled in our home, I have had the opportunity to cook and bake. So far, this mixer is a dream come true – it is easy to use, easy to clean, and boy does it look pretty! I absolutely LOVE this Yellow Pepper color in my kitchen. It is so bright and cheery and makes me happy every time I see it! I have tried several of the recipes from the user guide that came with the mixer, and all have been a hit with Jonathan. The peanut butter cookies were crunchy on the outside and chewy on the inside – just like I like them! The mint candies were something new and different. They were surprisingly tasty. Of course, the brownies were delicious (I am a chocoholic and can never get enough of the stuff)! Now, I am looking for more great recipes to try with my mixer and plan to buy The Mixer Bible.
In case you are wondering, the teal serving plate in the photo is the Fiesta Bread Tray in Peacock. This gets used a lot, and I will probably be getting a few more of these. They are great for bread, but I also use them for dessert displays and soup/sandwich combos. I really enjoy mixing up the colors in my Fiesta collection. They are so fun for every day and are also very durable. Only one piece has broken in the past 2 years. I basically flung a wet cereal bowl across the room while trying to quickly unload the dishwasher (my bad!).
