I am always looking for tasty, healthy meals. This recipe with sauteed zucchini and tomatoes was adapted from Skinnytaste. I followed her suggestion and added some pasta to make it a full meal. My daughter, Carina, helped me chop the organic zucchini and dropped the pieces into the pan – she loves to cook and bake. By her request, we had homemade blueberry muffins for dessert!
